Fonio is a small-grained millet. Because the seed is very small (similar to teff) the traditional husking method was very labor intensive. There was a new fonio producer (Yolele?) at the WFFS 20. The samples I tried were very tasty.

Millet profile. Bob’s Red Mill carries proso millet instead of the more common pearl millet or foxtail millet.
