North African Cuisine

North Africa consists of the Maghreb (Algeria, Morocco, Tunisia, and Libya), Western Sahara (mostly under Moroccan control), Sudan (but not South Sudan), and Egypt.  (The latter two are often included in Eastern Africa.)

Moroccan couscous, tangines, and mint tea are the most familiar North African dishes in America.  Distinctive ingredients include preserved lemons, ras el hanout (spice blend), and argan oil.
